I have had two lonely ranch packets in my cabinet for almost a year waiting to be used up. And for some reason I have been thinking of ranch chicken anyway, but to give credit where it's due I also got inspiration from this Jamie Cooks It Up post via pinterest. The sauce is all her, except I doubled the sour cream.My family loved the sauce, and while I thought it was good, I didnt think that it needed it. The chicken was moist and flavorful on it's own.
3 large chicken breasts
1 pkg. ranch dressing powder
1 egg
1/2 c. milk
8 oz bag shredded provolone cheese
1 sleeve ritz crackers, crushed
1 can cream of chicken soup
2 Tbsp. butter
1/4 c. sour cream
Pre heat your oven to 450 and spray a large casserole dish with cooking spray.
Trim the chicken, cut in half lengthwise, and cut into portions. Sprinkle on both sides with Ranch powder and pat it so it adheres. Whisk together the milk and egg.
Dip each piece of chicken in the eggs, then the cheese. Press the chicken into the cheese so it sticks. The dip it into the crumbs, pressing again so they stick.
Place in the baking dish. When all the chicken is done cover the pan with foil and bake for 20 minutes. Remove the foil and bake an additional 15 minutes.
For the sauce simmer everything together until bubbly.
